Step by Step Method

Step 1

Melt butter in large nonstick skillet.

Step 2

Season the chicken with salt and pepper (or spices of your choice). Add chicken to skillet; cook over medium-high heat 5 to 7 minutes or until light brown. Add garlic and cook briefly.

Step 3

To the skillet, add chicken broth, rice, and juice from half a lemon. Bring to a boil. Cover, reduce heat and simmer 20 minutes. Add broccoli, carrots and cauliflower; continue cooking 5 minutes or until internal juices of chicken run clear.

Step 4

Cut remaining lemon half into slices and use for garnish.

This recipe was made on 12/14/13 for two games, " Billboard Tag " & " Alphabet Tag ". Due to what I had on hand,couple of changes were made. Instead of the breasts,thighs were used.For the seasoning,I used Cajun Spice Mix.And no garlic cloves,so I sprinkled some garlic powder over the rice. No lemons were on hand,so that was omitted.And I used chicken bouillon powder dissolved in hot water.The cooking time for everything was " right on the money ". Even though my SO and I enjoyed the recipe, we felt that it needed " something else " in the seasoning department. Maybe some oregano, perhaps?. Thanks for posting and, " Keep Smiling :) "
