Ingredients

The ingredients are:
  • 4 fillets (1 to 1 1/4 pounds) boneless skinless chicken breast
  • Salt and pepper
  • 2 tablespoons butter (or margarine)
  • 3 garlic cloves, minced (or more)
  • 2 cups chicken stock (or hot water mixed with two chicken bouillon cubes)
  • 139 grams dry long grain white rice (dry, 3/4 cup)
  • 1 lemon, whole (halved)
  • 183 to 224 grams frozen mixed vegetables (broccoli, carrots and cauliflower, 1 1/2-2 cups)

How to Make

  • Step 1: Melt butter in large nonstick skillet.

  • Step 2: Season the chicken with salt and pepper (or spices of your choice). Add chicken to skillet; cook over medium-high heat 5 to 7 minutes or until light brown. Add garlic and cook briefly.

  • Step 3: To the skillet, add chicken broth, rice, and juice from half a lemon. Bring to a boil. Cover, reduce heat and simmer 20 minutes. Add broccoli, carrots and cauliflower; continue cooking 5 minutes or until internal juices of chicken run clear.

  • Step 4: Cut remaining lemon half into slices and use for garnish.
