Step 1: Melt butter in large nonstick skillet.
Step 2: Season the chicken with salt and pepper (or spices of your choice). Add chicken to skillet; cook over medium-high heat 5 to 7 minutes or until light brown. Add garlic and cook briefly.
Step 3: To the skillet, add chicken broth, rice, and juice from half a lemon. Bring to a boil. Cover, reduce heat and simmer 20 minutes. Add broccoli, carrots and cauliflower; continue cooking 5 minutes or until internal juices of chicken run clear.
Step 4: Cut remaining lemon half into slices and use for garnish.
