" Quick easy and attractive "do ahead" appetizer. Instead of the English muffin I use whole wheat sandwich bread slices flattened with a rolling pin, crusts removed, toasted on one side. These freeze well - right from the freezer into the oven 375f for about 15 minutes"

Step 1

Beat together the cheese, butter, mayo, lemon juice, cayenne and onion powder

Step 2

Beat until smooth then stir in the chopped shrimp

Step 3

Spread the mixture on the 8 muffin halves

Step 4

Cut each muffin half into 4 pieces, place on cookie sheet

Step 5

Broil 8 inches from heat source until the cheese is nice and bubbly and lightly browned, approximately 15 minutes Serve warm
