"Found this in local paper many years ago. I have made these in a regular muffin tin (12) and adjusted the baking time with great results."

Step 1

In a small bowl, whisk together flour, baking powder, salt and pepper.

Step 2

In a large bowl, whisk eggs until frothy; whisk in milk.

Step 3

Fold in flour mixture, stirring gently to combine.

Step 4

Fold in bacon, red pepper, cheese and onion.

Step 5

Spoon a heaping 15 ml (1 tbsp) into well-greased mini-muffin cups.

Step 6

Bake in a 230 C (450 F) oven until golden and puffed, about 15 minutes.

Step 7

Let cool on rack.

FOR THE TOPPING


Step 8

In a small bowl, mix together sour cream and hot sauce.

Step 9

Spoon about 2 ml (1/2 tsp) topping onto each bite.

Step 10

Sprinkle with parsley and red pepper, if using.

I cut the recipe in half and it worked perfect...we loved all the flavor and really enjoyed the sour cream mixture...we did find that it was a tad bit on the dry side...they sure are cute...made for "Billboard" tag game...
