Ingredients

The ingredients are:
  • 1 3/4 cups all-purpose flour (425 ml)
  • 2 teaspoons baking powder (10 ml)
  • 1/2 teaspoon salt (2 ml)
  • 1/2 teaspoon pepper (2 ml)
  • 2 large eggs
  • 1 cup whole milk (250 ml)
  • 4 slices (4 ounces) bacon (cooked and crumbled)
  • 1 small-medium sweet red (6 ounce) bell pepper (finely chopped)
  • 1 cup cheddar cheese, shredded (250 ml)
  • 1/2 cup minced red onion (125 ml)
  • TOPPING
  • 1/4 cup sour cream (50 ml)
  • 1/2 teaspoon hot sauce (2 ml)
  • Minced fresh parsley and chopped sweet red pepper (optional)

How to Make

  • Step 1: In a small bowl, whisk together flour, baking powder, salt and pepper.

  • Step 2: In a large bowl, whisk eggs until frothy; whisk in milk.

  • Step 3: Fold in flour mixture, stirring gently to combine.

  • Step 4: Fold in bacon, red pepper, cheese and onion.

  • Step 5: Spoon a heaping 15 ml (1 tbsp) into well-greased mini-muffin cups.

  • Step 6: Bake in a 230 C (450 F) oven until golden and puffed, about 15 minutes.

  • Step 7: Let cool on rack.

  • FOR THE TOPPING

  • Step 8: In a small bowl, mix together sour cream and hot sauce.

  • Step 9: Spoon about 2 ml (1/2 tsp) topping onto each bite.

  • Step 10: Sprinkle with parsley and red pepper, if using.
