Step by Step Method

Step 1

Whisk brown sugar, vinegar, chili paste, fish sauce, Sriracha, and ginger in a large bowl. Pour into a zip-lock bag, Add chicken and toss to coat. Marinate for at least 30 minutes.

Step 2

Prepare grill for medium-high heat. Remove chicken and thread 4 or 5 pieces onto each skewer.

Step 3

Transfer leftover marinade to a small saucepan. Bring to a boil, reduce heat, and simmer until reduced by half (about 1 cup), 7–10 minutes.

Step 4

Grill chicken, turning and basting often with reduced marinade, until cooked through, 8–10 minutes. Don't over cook!

These are fantastic!!! Just the right amount of heat for us. I marinated the chicken for 24 hours. I had every intention of grilling them but the weather did not permit, so I baked them in the oven for 25 minutes and broiled them for 2 minutes. They were perfectly cooked.

OMG...this is right up our alley...we loved the heat...it is hot but not too much for the hubby and I...all you need to do is look at the ingredients...my tongue is still doing the happy dance...I served it with a delicious dish from Rashmalaysia...https://rasamalaysia.com/panda-express-chow-mein-copycat... they worked so good together...you can see the dish in the photo...I used my George Foreman grill to cook the chicken...made for "Billboard" tag game...
