"From one of our national supermarkets. Please note our pastry sheets are approximately 22cm to 23cm square and come in packets of 5 or 10 sheets."

Step 1

Preheat oven to 220C.

Step 2

Cut 8cm rounds from each pastry sheet and press into patty pans.

Step 3

You can do these in batches, keeping remaining patry rounds in the fridge until needed.

Step 4

Bake for about 12 minutes until golden and crisp, repeat with remaining pastry and cool.

Step 5

Meanwhile, combine avocado, tomato, onion and chives in a bowl and season with salt and pepper.

Step 6

Using a teaspoon, fill the cooked pastry cases with some of the avocado mixture and then top with the salmon strips and drizzle with a a little lemon juice.

Made for what was to be my smallest family brunch w/just my BIL & SIL as guests. However, the late hour addition of 2 extra guests meant I had to expand the menu & this FYC Tag Game selection was perfect for an add I knew would be a big hit w/my guests. Thank goodness you had told me I could always “tinker” w/your recipes as needed because I took the liberty of a shortcut to make it happen. The filling was a quick-fix of ingredients already on-hand, so the issue was the short crust pastry. I replaced it w/packaged mini-tartlett shells I also had on-hand & was good-to-go. I’ve been feeding Siggi’s family for nearly 14 yrs now & I knew they’d love your recipe. I was right, so thx for sharing it w/us for our last family brunch until after the New Year greets us. :-)
