Step 1: Preheat oven to 220C.
Step 2: Cut 8cm rounds from each pastry sheet and press into patty pans.
Step 3: You can do these in batches, keeping remaining patry rounds in the fridge until needed.
Step 4: Bake for about 12 minutes until golden and crisp, repeat with remaining pastry and cool.
Step 5: Meanwhile, combine avocado, tomato, onion and chives in a bowl and season with salt and pepper.
Step 6: Using a teaspoon, fill the cooked pastry cases with some of the avocado mixture and then top with the salmon strips and drizzle with a a little lemon juice.
Step 7: Serve
