Ingredients

The ingredients are:
  • 2 sheets (320 grams) frozen pastry (short crust pastry, thawed)
  • 1 large (5 ounce) avocado (seeded and chopped finely)
  • 3 roma (12 ounces) tomatoes (seeded and chopped finely)
  • 1 small (4 ounce) red onion (chopped finely)
  • 1 tablespoon chives (finely chopped)
  • 100 grams smoked salmon (slices, cut into strips)
  • 1 tablespoon lemon juice

How to Make

  • Step 1: Preheat oven to 220C.

  • Step 2: Cut 8cm rounds from each pastry sheet and press into patty pans.

  • Step 3: You can do these in batches, keeping remaining patry rounds in the fridge until needed.

  • Step 4: Bake for about 12 minutes until golden and crisp, repeat with remaining pastry and cool.

  • Step 5: Meanwhile, combine avocado, tomato, onion and chives in a bowl and season with salt and pepper.

  • Step 6: Using a teaspoon, fill the cooked pastry cases with some of the avocado mixture and then top with the salmon strips and drizzle with a a little lemon juice.

  • Step 7: Serve
