Step by Step Method
Step 1
Preheat oven to 200C.
Step 2
Arrange chicken in a roasting pan.
Step 3
Thinly slice 1 lemon and arrange slices over the chicken and sprinkle with ginger.
Step 4
Juice the remaining lemon and combine the juice, honey and soy sauce in a small bowl and pour evenly over the chicken.
Step 5
Roast basting occasionally with pan juices, for 40 minutes or until chicken is golden brown and cooked through.
Step 6
Add the broccolini to the chicken mixture and bake for 2 minutes or until bright green and tender crisp.
