Ingredients

The ingredients are:
  • 1.5 kilogram chicken thighs (cutlets and or drumsticks)
  • 2 lemons, whole
  • Gingerroot (5cm piece, cut into matchsticks)
  • 80 ml low-sodium soy sauce (1/3 cup)
  • Broccolini (cut into 5cm lengths, 2 bunches)

How to Make

  • Step 1: Preheat oven to 200C.

  • Step 2: Arrange chicken in a roasting pan.

  • Step 3: Thinly slice 1 lemon and arrange slices over the chicken and sprinkle with ginger.

  • Step 4: Juice the remaining lemon and combine the juice, honey and soy sauce in a small bowl and pour evenly over the chicken.

  • Step 5: Roast basting occasionally with pan juices, for 40 minutes or until chicken is golden brown and cooked through.

  • Step 6: Add the broccolini to the chicken mixture and bake for 2 minutes or until bright green and tender crisp.
