Step 1

Preheat oven to 450 degrees F.

Step 2

In a bowl combine first 6 ingredients (cauliflower - orange peel; toss.

Step 3

On a rimmed cookie sheet spread vegetables and sprinkle with salt and pepper.

Step 4

Roast in oven until lightly browned and tender (10-12 minutes). Pour orange juice over and roast until vegetables are tender and juices evaporate (8-10 minutes).

Step 5

Stir in chopped parsley.

Step 6

Transfer to serving dish and garnish with orange slices and additional parsley if desired.
