Ingredients

The ingredients are:
  • 2 pounds cauliflower (1 head, cut into 1 inch florets)
  • 1 pound Brussels sprouts (halved if they are large)
  • 1/4 cup olive oil
  • 1 shallot, minced
  • 2 garlic cloves, minced
  • 1 tablespoon grated orange peel
  • 1/2 cup orange juice
  • 1/3 cup chopped parsley
  • Orange slices, garnish

How to Make

  • Step 1: Preheat oven to 450 degrees F.

  • Step 2: In a bowl combine first 6 ingredients (cauliflower - orange peel; toss.

  • Step 3: On a rimmed cookie sheet spread vegetables and sprinkle with salt and pepper.

  • Step 4: Roast in oven until lightly browned and tender (10-12 minutes). Pour orange juice over and roast until vegetables are tender and juices evaporate (8-10 minutes).

  • Step 5: Stir in chopped parsley.

  • Step 6: Transfer to serving dish and garnish with orange slices and additional parsley if desired.
