Step 4: Roast in oven until lightly browned and tender (10-12 minutes). Pour orange juice over and roast until vegetables are tender and juices evaporate (8-10 minutes).
Step 5: Stir in chopped parsley.
Step 6: Transfer to serving dish and garnish with orange slices and additional parsley if desired.
