Step 1
Over medium high heat bring a pot of water to a boil.
Step 2
Meanwhile in a skillet over medium heat add bacon and cook for 3-5 minute or until it starts to release fat and then add the shallot and continue sautéing until bacon is crisp (3-5 minutes); drain off fat.
Step 3
Add brussels sprouts to boiling water and blanch until tender (5-10 minutes); drain. Be careful not to overcook.
Step 4
Add brussels sprouts to skillet (with bacon and shallot) and cook over medium heat for a few minutes . Season with pepper (but if you use the peppered bacon you may not need additional pepper).
