Step by Step Method

Step 1

Preheat oven to 450 degrees F.

Step 2

In a bowl toss the broccoli and 3 tablespoons oil; sprinkle with salt and pepper. Transfer to rimmed baking sheet.

Step 3

Roast for 15 minutes.

Step 4

In a small bowl stir in remaining oil (1/2 tablespoon), garlic and red pepper flakes. Drizzle mixture over the broccoli; toss.

Step 5

Roast 8-10 minutes longer or when broccoli begins to brown.

Step 6

Season to taste with salt and pepper.

Apart from the fact that I completely forgot to add the red pepper flakes, I followed this recipe exactly as written. I was cooking a roast at the time, and this was so easy to prepare and roast with the other vegetables and meat. We really did love the broccoli roasted like this (even without the pepper flakes). It had a crunch from the roasting and was not overcooked at all. I did cut my florets a little larger and it took 20 minutes to roast, but it was just perfect. I will be making this again, and next time I will remember the pepper flakes!

This broccoli dish was very well enjoyed and we gobbled it up in no time. Though we are garlic lovers, I didn't use it because I'm experimenting for an upcoming dinner party where a couple of my guests are allergic. I used diced shallots instead. I will definitely be using garlic next time or else I will have a withdrawal!
