Step by Step Method
Step 1
In a medium bowl, combine the cucumbers, radishes and scallions.
Step 2
In a small bowl, mix together ¾ cup sour cream and 3/4 tsp salt. Taste and adjust seasoning if needed.
Step 3
Pour the sour cream onto the vegetables just before serving, stirring to combine.
If you allow the salad to sit, the dressing will be become more liquid due to the moisture released by the cucumber. This won't ruin the salad, but it won't look as nice.
