Step 1

Preheat oven to 350F. Butter a 1 1/2 quart caserole dish.

Step 2

Boil potatoes until tender, about 12 minutes. Drain and return to pan.

Step 3

Mash with butter, sour cream, onions, 3/4 cup cheese, salt and pepper.

Step 4

Turn mixture into casserole. Sprinkle with remaining cheese and paprika.

Step 5

Bake uncovered for 40 minutes until cheese is bubbling and turning brown.

Awesome! I cut this back to a smaller serving size and didn't have quite have enough sour cream, so I added a little bit of cream cheese to make up for it. These were the star of dinner. I'm adding this to my Best of cookbook. Thanks for sharing this wonderful recipe, Mike.

What they all said! When preparing for the larger gatherings I love great tasting make aheads, this was a recommend by Luvcookn as one she thought I would enjoy making and serving and it was! Served the same day or as a make ahead it's a great potato dish.

YUM! These were incredible immediately after mashing, but adding more cheese and some hot smoked paprika and baking took them over the top. Next time I'll saute the green onion, though, as it was a little crunchy. And maybe add some bacon. Definitely making these again!
