Step by Step Method

Step 1

Preheat oven to 350F. Butter a 1 1/2 quart caserole dish.

Step 2

Boil potatoes until tender, about 12 minutes. Drain and return to pan.

Step 3

Mash with butter, sour cream, onions, 3/4 cup cheese, salt and pepper.

Step 4

Turn mixture into casserole. Sprinkle with remaining cheese and paprika.

Step 5

Bake uncovered for 40 minutes until cheese is bubbling and turning brown.

Deeliciousss! I made a baked ham and made these potatoes to have with it. Perfect together with peas for our veggie and some Crescent rolls fresh out of the oven.

Awesome! I cut this back to a smaller serving size and didn't have quite have enough sour cream, so I added a little bit of cream cheese to make up for it. These were the star of dinner. I'm adding this to my Best of cookbook. Thanks for sharing this wonderful recipe, Mike.
