Step by Step Method

Step 1

To make the slaw: whisk together the mayonnaise, vinegar, honey, whiskey, scallion, salt and pepper. Spread each slice with stone ground mustard.

Step 2

On one slice of bread, add slices of Swiss cheese.

Step 3

Microwave for 10 seconds and remove.

Step 4

Place corned beef on top of the cheese.

Step 5

Spoon the coleslaw on top of the beef.

Step 6

Top the sandwich with bread. Cut on diagonal.

It's been a while since I've eaten corned beef and this was the perfect reentry for me. YUM! The flavor of the slaw and cheese paired perfectly to the corned beef with Dijon mustard. Delish!
