"Adapted from Tommy Bahama. Makes about 2 cups. Make sure you hand grate the cheese. The pre-grated stuff from the grocery won't work well here due to the nasty ingredients that keep it from clumping."

Step by Step Method
Step 1
In a medium bowl, whisk together the mayonnaise, adobo, Worcestershire sauce and pickled jalapeño brine until thoroughly combined.
Step 2
Add the jalapeños, pimentos, scallions and lime juice. Stir to combine. Add the cheese and stir to coat all the cheese and distribute the ingredients evenly.

Serve, garnished with more sliced scallions on top, with good quality tortilla chips. Or put on a burger. Or...

NOTE: ALTERNATELY, IF YOU LIKE A SMOOTHER TEXTURE, YOU CAN PUT THE FIRST FOUR INGREDIENTS (MAYO THROUGH JALAPENO JUICE) AND THE CHEESE IN A BLENDER FOR 5 MINUTES, STOPPING TO SCRAPE OCCASIONALLY. THEN ADD THE REMAINING INGREDIENTS AND BLEND FOR 1 MORE MINUTE.
