Step 1: In a medium bowl, whisk together the mayonnaise, adobo, Worcestershire sauce and pickled jalapeño brine until thoroughly combined.
Step 2: Add the jalapeños, pimentos, scallions and lime juice. Stir to combine. Add the cheese and stir to coat all the cheese and distribute the ingredients evenly.
Step 3: Serve, garnished with more sliced scallions on top, with good quality tortilla chips. Or put on a burger. Or...
Step 4: NOTE: ALTERNATELY, IF YOU LIKE A SMOOTHER TEXTURE, YOU CAN PUT THE FIRST FOUR INGREDIENTS (MAYO THROUGH JALAPENO JUICE) AND THE CHEESE IN A BLENDER FOR 5 MINUTES, STOPPING TO SCRAPE OCCASIONALLY. THEN ADD THE REMAINING INGREDIENTS AND BLEND FOR 1 MORE MINUTE.
