Step 1
Heat a nonstick skillet on medium heat. Coat pan with cooking spray.
Step 2
Add veggies and cayenne pepper. Saute 4 minutes stirring occationally.
Step 3
Pour in egg whites over veggies in pan and sprinkle goat cheese over top.
Step 4
Cook 3 to 4 minutes. Carefully flip omelet and cook 2 additional minutes.
Step 5
Serve with toast.
