  • 1/4 cup tomatoes, chopped
  • 1 cup fresh spinach leaves, rough chopped
  • 1 cup broccoli florets (chopped)
  • 40 grams egg whites (beaten, 4 large egg whites)
  • 2 tablespoons crumbled goat cheese
  • 1/4 teaspoon cayenne pepper

How to Make

  • Step 1: Heat a nonstick skillet on medium heat. Coat pan with cooking spray.

  • Step 2: Add veggies and cayenne pepper. Saute 4 minutes stirring occationally.

  • Step 3: Pour in egg whites over veggies in pan and sprinkle goat cheese over top.

  • Step 4: Cook 3 to 4 minutes. Carefully flip omelet and cook 2 additional minutes.

  • Step 5: Serve with toast.
