Step by Step Method

Step 1

Place olive oil in large pot over medium heat.

Step 2

When heated, saute onions, cloves, cinnamon, minced garlic and ginger root. When onion is opaque

Add tomatoes, chilies and tomato sauce. The mixture will become soupy as tomatoes release their water, but do not add more tomato sauce.

Step 4

When mixture is soupy

Stir in spices.

Step 6

After it bubbles a few minutes add chicken pieces and stir until coated. Reduce heat and cover.

Step 7

After ten minutes, add yogurt.

Step 8

After another ten minutes, squeeze in lime

Step 9

But only once, and lightly, as too much will rob the flavor.

Step 10

Start preparing the rice while this mixture cooks for 20-30 minutes, or until chicken is done.

Step 11

If too spicy, eliminate the chili peppers and cut the spices in half.

Step 12

Also, drinking milk or water with the meal will take the edge off the spices.

Step 13

If not spicy enough, increase curry powder and add red pepper.

Step 14

The yogurt can be a side dish.

Step 15

Serve the chicken over rice and with pita bread.

This is one great Curry! I love curries especially when passed along from family and friends, they are always extra good! I made mine with chicken thighs as seems they add extra flavor to the curries. Served with Jasmine rice. Didn't scale this one back as know curries are very freezer friendly. How good? Added to my favorite Curry File!

Delicious. I used boneless thighs instead of breasts and served over egg noodles. Lots of great flavors in this dish.
