Step by Step Method
Step 1
Place olive oil in large pot over medium heat.

When heated, saute onions, cloves, cinnamon, minced garlic and ginger root. When onion is opaque

Add tomatoes, chilies and tomato sauce. The mixture will become soupy as tomatoes release their water, but do not add more tomato sauce.

After it bubbles a few minutes add chicken pieces and stir until coated. Reduce heat and cover.

After ten minutes, add yogurt.

After another ten minutes, squeeze in lime

But only once, and lightly, as too much will rob the flavor.

Start preparing the rice while this mixture cooks for 20-30 minutes, or until chicken is done.

If too spicy, eliminate the chili peppers and cut the spices in half.

Also, drinking milk or water with the meal will take the edge off the spices.

If not spicy enough, increase curry powder and add red pepper.

The yogurt can be a side dish.

Serve the chicken over rice and with pita bread.
