"A sweet and sassy take on the classic Mojito - from Sur La Table."
Ingredients
- To make simple syrup, take equal parts water and sugar, bring to a boil and stir until sugar is dissolved. Cool. Keeps for a month (in a glass container) in the fridge.

Step by Step Method
Step 1
Muddle the lime, pineapple and basil in a cocktail shaker.
Step 2
Add the rum and simple syrup, and fill the shaker with crushed ice. Shake vigorously.
Step 3
Pour the contents of the shaker into a hollowed-out pineapple (or a very large glass) and top off with crushed ice and soda water. Garnish with lemongrass, two straws, and of course a little umbrella!
