Ingredients

The ingredients are:
  • 1 lime, whole (cut into 12 pieces)
  • 7 ounces pineapple, chopped (fresh, 1 cup)
  • Basil leaves (1 small handful)
  • 3 ounces rum (white rum)
  • 1 ounce simple syrup
  • To make simple syrup, take equal parts water and sugar, bring to a boil and stir until sugar is dissolved. Cool. Keeps for a month (in a glass container) in the fridge.
  • 2 ounces soda water (seltzer)
  • OPTIONAL FOR SERVING
  • Hollowed-out pineapple
  • Lemongrass stalk

How to Make

  • Step 1: Muddle the lime, pineapple and basil in a cocktail shaker.

  • Step 2: Add the rum and simple syrup, and fill the shaker with crushed ice. Shake vigorously.

  • Step 3: Pour the contents of the shaker into a hollowed-out pineapple (or a very large glass) and top off with crushed ice and soda water. Garnish with lemongrass, two straws, and of course a little umbrella!
