"This is out of an old Pillsbury cookbook called "Real Home Cooking" dated 1991...it say's that strips of chicken and chunks of pineapple bake in a sweet-sour sauce."

Step by Step Method

Step 1

Preheat oven to 375°.

Step 2

In medium saucepan, combine onion, sugar, garlic powder, ketchup, 3/4 cup reserved pineapple liquid, lemon juice and soy sauce,.

Step 3

Bring to a boil.

Step 4

Reduce heat: cover and simmer 15 minutes. stirring occasionally.

Step 5

In plastic bag or shallow bowl, toss chicken strips with flour to coat.

Step 6

In large skillet over medium heat, cook chicken in hot oil 4 to 5 minutes or until lightly browned.

Step 7

Arrange cooked chicken and pineapple in 12X8-inch (2 qt) baking dish.

Step 8

Top with sauce; sprinkle with sesame seeds.

Step 9

Bake for 20 to 25 minutes or until chicken is hot and sauce is bubbly.

Step 10

Serve over hot cooked rice.

YUM! This is going into my Best of 2022 file. It's delicious with great flavor. The chicken retains a bit of the crispy coating while simultaneously sopping up the yummy pineapple sauce. The prep was easy and I loved that I could just throw it in the oven and forget it until it was cooked. We served this over rice. Thank you!

Delicious! I only used 1 tbsp. of sugar because the ketchup and pineapple juice already is very sweet for our taste, but that was the only change I made. We had it with rice and veggies. Absolute winner! Thanks for sharing!

This reminded of Chinese we used to have when I was young. Great sweet and sour flavors with juicy and moist chicken covered in a thick rich sauce. DH commented on how moist the chicken was and really enjoyed this served with a side of rice. I will be making this again as everything (except chicken) was on hand in the pantry so this made for a very quick and easy dish to make for DH after coming home from work. Great recipe.

This sauce reminds me of the sweet and sour sauce from the local Chinese take out, just not as thick and the onions are cooked more. I would have added some bell peppers for color, but I have a picky one eating that will not put bell peppers in his mouth. Very, very good....only suggestion I would make is to cook the chicken in a couple of batches to keep from overcrowding the skillet. This was a great dinner for us. Thanks for sharing!

Daily Inspiration

What a great meal we had tonight. This dish is easy to put together and has great flavor. The pineapple is a great addition. Served over rice, as recommended, with a side of steamed broccoli. Definitely a repeat at our house.
