"These are quick and easy to throw on the grill at your next BBQ. They taste great on their own, or you can try them on top of ice cream. For richer flavor, substitute water with a dark Cuban rum and marinate slices for an hour before grilling."

Step 1

Peel and core pineapple, then cut into 1/2-inch thick rings.

Step 2

Mix brown sugar and water in small bowl, then mix in melted butter.

Step 3

Dip each ring into the sugar mixture, or brush the sugar mixture onto the slices (make sure both sides are coated).

Step 4

Grill slices for 2-5 minutes each side, until dark grill marks form.

Step 5

Remove from the grill and serve.

This was really good. I used a Cuban rum instead of water. DH had his with ice cream and I had mine plain. Made for SWT 2019

So good! I made this with Dark Rum as the recipe recommends. It was delicious. I doubled the sauce part and after dipping and grilling the fresh pineapple I poured the rest of the sauce in a hot nonstick frying pan and reduced it down by at least half, if was fairly thick when I was done. For a boost I added a splash of rum into it after cooking so it would have a brighter flavor. The pine apple was easy to grill , I was afraid it might cook and burn to quickly but that wasn't a problem. I served the pineapple with ice cream, the rum sauce, and chopped toasted pecans. Delish!!! I had some left over pineapple which I used to make a cocktail, also super tasty! Made for SWT 2019
