"This is a simple and delicious dish. I like my sauce a little chunkier so usually just pulse the sauce to leave some tomato chunks."

Step by Step Method

Step 1

Put oil and butter in pan and sauté‚ onions, garlic and mushrooms for 5 minutes.

Step 2

Add tomatoes, basil, vodka, pepper flakes, salt and pepper.

Step 3

Simmer for 15 to 20 minutes.

Step 4

Stir in cream.

Step 5

Put in processor and pulse until creamy.

Step 6

Serve over penne with Parmesan cheese.

Yum!!! Made this exactly as written and we loved it! I apologize in advance for the photo... I used baby bellas, which are brown instead of white, and it affected the color of the sauce. Won't make that mistake again! Still tasted wonderful but turned out rather brownish/yellowish instead of bright red. Yikes! I'm happy to say that we'll be making this again - using fresh tomatoes from the farm stand really makes a difference. Thanks for posting!

By the time I realised there were mushrooms in this, it was too late, so mine doesnt have mushrooms, and I put in some shrimp meat instead, which was very nice. Otherwise, as recipe, I also let the sauce cook down but didnt pulse it, preferring it to have more body. Lovely recipe which we enjoyed very much, easily and quickly done but quite special :) Thank you for sharing
