Step by Step Method

Step 1

In a large bowl, whisk together the mustard, vinegar and oil. Season to taste with salt and pepper. Add the greens, pears, turkey and Gouda to the bowl and toss with the vinaigrette to lightly coat. Divide the salad among 6 plates, and top with the walnuts and dried cranberries.

I love salads like this! Used up some of my Thanksgiving turkey and with the rest of the ingredients, it's a Win Win. I didn't plan to use raisins, but not sure what the heck happened to my bag of craisins. A little culprit must have eaten them....hmmmm. Anyway, Delicious Salad, Teresa! Made it for Billboard Tag and FYC.

5+ stars for this salad! The only thing I did differently was instead of walnuts I used pecans. This salad has fantastic flavors and textures plus it's pretty to look at. The dressing was great but next time will make it ahead of time and let the flavors meld together a bit more. Putting this one in my favorite folder! Made and reviewed for the What's On The Menu tag game.

I would easily give this more stars. We totally loved the combinations of flavors and textures. I used less cheese, nuts and olive oil to cut calories. My turkey was the deli lunch meat kind, julienned. I used extra vinegar to make up for the lost volume from the olive oil. Also, I used low-sugar craisins. So I used all the right stuff, just a little tweak on the proportions! I love this, did I mention that?

Daily Inspiration

This salad is fabulous and so easy to put together. I had everything on hand and every ingredient was flavorful and I made a "happy plate". The only change, due to preference, that I made was to sub apples for pears. The dressing was yummy and I did add a touch of honey to it to offset the tartness from the vinegar. Will be making this salad often.
