Step by Step Method

Step 1

Melt 3 tablespoon of the butter in sauté pan.

Step 2

Sauté pear slices until just turning soft. Remove from pan and set aside.

Step 3

Beat together eggs, cream or milk, and salt & pepper until blended but not frothy.

Step 4

Melt remaining butter in omelet pan over high heat until foam begins to recede but before beginning to color.

Step 5

Pour in egg mixture into omelet pan, stirring lightly, but allowing it to set on the bottom.

Step 6

Top half of the omelet with sautéed pears and cheese.

Step 7

With spatula, fold other half over pears and cook until cheese begins to melt. Cut omelet in half and slide out of pan onto heated plates.

Step 8

Serve.

I have a Bosc pear tree and yard birds, plus leftover gruyere so I gave this omelet a try. I've never sauteed pears before - pretty tasty. I cut the recipe down to serve one.

Just had this for breakfast, and what an excellent combination of flavours! I've had pears with cheese before, but never omelette with pears and cheese. Sweet and savoury, wonderful. Thanks for sharing! Made for Culinary Quest 2015 / Switzerland

Wonderful delicate flavoured omelet. Perfect for a romantic brunch, accompanied with a champagne cocktail or for an after the theatre light dinner. I used smoked Gruyere, perfect. For me, at my age, it was a perfect Sunday Brunch. This will be made again for sure.
