Step 1: Melt 3 tablespoon of the butter in sauté pan.
Step 2: Sauté pear slices until just turning soft. Remove from pan and set aside.
Step 3: Beat together eggs, cream or milk, and salt & pepper until blended but not frothy.
Step 4: Melt remaining butter in omelet pan over high heat until foam begins to recede but before beginning to color.
Step 5: Pour in egg mixture into omelet pan, stirring lightly, but allowing it to set on the bottom.
Step 6: Top half of the omelet with sautéed pears and cheese.
Step 7: With spatula, fold other half over pears and cook until cheese begins to melt. Cut omelet in half and slide out of pan onto heated plates.
Step 8: Serve.
