Step by Step Method

Step 1

Preheat the oven to 400°.

Step 2

Combine the first three ingredients in a mini chopper. Pulse until finely ground. Combine the nut mixture, baking sode, and the next 3 ingredients (through cheese) in a shallow bowl.

Step 3

Combine the buttermilk and egg white in a shallow bowl.

Step 4

Dip the chicken in the buttermilk mixture. Sprinkle with salt and pepper, then dredge in the flour mixture.

Step 5

Spray a baking dish with cooking spray. Place chicken breasts in the dish and then lightly spray the tops of the chicken breasts. Bake at 400° for 20 minutes or until golden brown and chicken is done.

Very tasty. Loved the pine nuts and a little crunch from the cornmeal. I cut recipe down for one breast. I may try this coating on fried tilapia.

Daily Inspiration

We enjoyed this easy and delicious way to make oven-friend chicken. Loved using the buttermilk which always make it so nice and tender.
