Step 1: Preheat the oven to 400°.
Step 2: Combine the first three ingredients in a mini chopper. Pulse until finely ground. Combine the nut mixture, baking sode, and the next 3 ingredients (through cheese) in a shallow bowl.
Step 3: Combine the buttermilk and egg white in a shallow bowl.
Step 4: Dip the chicken in the buttermilk mixture. Sprinkle with salt and pepper, then dredge in the flour mixture.
Step 5: Spray a baking dish with cooking spray. Place chicken breasts in the dish and then lightly spray the tops of the chicken breasts. Bake at 400° for 20 minutes or until golden brown and chicken is done.
