Step by Step Method

Step 1

Boil noodles and turn into colander to drain.

Step 2

Stir together: sour cream, cottage cheese, sugar, oil, cinnamon, vanilla, salt, and syrups.

Step 3

Add noodles and eggs and mix well.

Step 4

In a 1-quart round casserole, layer one-half the noodle mixture.

Step 5

Arrange apricot halves and peach slices on top of it.

Step 6

Spread remaining mixture over the fruit.

Step 7

Bake uncovered at 350' F. for 1 hour.

Step 8

Garnish with extra apricots and peaches.

Step 9

Serve warm with chicken or meat.

I was looking for a noodle pudding similar to what my mother made and this was very close and it is so good. I only used canned peaches because for some reason no store had canned apricots. I served this to a potluck lunch and every one loved it and everyone said that it was so good but had never had anything like it! Thanks for sharing!
