"Another recipe found in the Stray Rescue fundraiser cookbook I picked up at a Goodwill thrift store. This one was credited to Lern Colvin, a local radio personality."
Preheat oven to 400 degrees.
In a medium mixing bowl, beat together eggs, flour, salt, pepper, herbs, milk and 3/4 cup Parmesan cheese.
Spray a mini-muffin pan with non-stick cooking spray. Pour batter into muffin cups, filling each 3/4 full.
Top with remaining Parmesan cheese.
Bake until puffed and golden brown, 20-25 minutes.
Remove from muffin pan and let cool.
