  • 3 large eggs
  • 3/4 cup all purpose flour
  • 1/4 teaspoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 1/2 teaspoon Herbs de Provence
  • 4 tablespoons chopped fresh parsley
  • 1 cup milk (skim or whole milk works)
  • 3/4 cup grated Parmesan cheese
  • 1/4 cup Parmesan cheese (to sprinkle on top)

How to Make

  • Step 1: Preheat oven to 400 degrees.

  • Step 2: In a medium mixing bowl, beat together eggs, flour, salt, pepper, herbs, milk and 3/4 cup Parmesan cheese.

  • Step 3: Spray a mini-muffin pan with non-stick cooking spray. Pour batter into muffin cups, filling each 3/4 full.

  • Step 4: Top with remaining Parmesan cheese.

  • Step 5: Bake until puffed and golden brown, 20-25 minutes.

  • Step 6: Remove from muffin pan and let cool.
