Step by Step Method
Step 1
Preheat oven to 350 degrees F.
Step 2
Cook hamburger, bell pepper and onion.
Step 3
Season lightly.
Step 4
Add spaghetti sauce, tomatoes, corn, kidney beans, and olives.

Simmer for 10 minutes.
Step 6
Line bottom of Pam sprayed 9x13 pan with 5 corn tortillas.
Step 7
Slice zucchini lengthwise and layer on top of tortillas.
Step 8
Save half of zucchini for next layer.
Step 9
Mix cottage cheese, Parmesan cheese and egg.
Step 10
Use half on top of tortilla and zucchini.
Step 11
Spoon half of meat sauce over cottage cheese layer.
Step 12
Repeat layers.
Step 13
Cover.
Step 14
Bake at 350 degrees for one hour, top with Mozzarella cheese and bake 30 minutes more.
Step 15
Let sit 10 or 15 minutes and serve.
