Ingredients

The ingredients are:
  • 3 zucchini, sliced lengthwise
  • 12 ounces corn tortillas (12)
  • 1 1/2 pounds ground beef
  • 1/2 teaspoon salt
  • 1/4 teaspoon pepper
  • 1 cup onion, chopped
  • 28 ounces spaghetti sauce (1 jar)
  • 14 ounces corn, drained (1 can)
  • 15 ounces kidney beans, rinsed, drained (1 can)
  • 1/2 cup bell pepper, chopped
  • 1/4 cup black olives, sliced
  • 15 ounces tomatoes, diced (1 can)
  • 12 ounces cottage cheese (1 1/2 cups)
  • 4 ounces parmesan cheese, grated (1/2 cup)
  • 1 egg
  • 16 ounces mozzarella cheese, shredded (2 cups)

How to Make

  • Step 1: Preheat oven to 350 degrees F.

  • Step 2: Cook hamburger, bell pepper and onion.

  • Step 3: Season lightly.

  • Step 4: Add spaghetti sauce, tomatoes, corn, kidney beans, and olives.

  • Step 5: Simmer for 10 minutes.

  • Step 6: Line bottom of Pam sprayed 9x13 pan with 5 corn tortillas.

  • Step 7: Slice zucchini lengthwise and layer on top of tortillas.

  • Step 8: Save half of zucchini for next layer.

  • Step 9: Mix cottage cheese, Parmesan cheese and egg.

  • Step 10: Use half on top of tortilla and zucchini.

  • Step 11: Spoon half of meat sauce over cottage cheese layer.

  • Step 12: Repeat layers.

  • Step 13: Cover.

  • Step 14: Bake at 350 degrees for one hour, top with Mozzarella cheese and bake 30 minutes more.

  • Step 15: Let sit 10 or 15 minutes and serve.
