"I have tried many versions of this recipe and had combined quite a few and tweaked some to make this version that I use all the time. A really delicious flavor. I like to serve this over a nice bed of buttered egg noodles called dumplings. Delicious with a nice crusty bread to soak up all that goodness!!"

Step by Step Method

Step 1

Brown chicken in oil using a large skillet over medium-high heat. When browned on both sides remove chicken from skillet and put aside.

Step 2

Lower heat to medium and add in onions,carrots,celery,mushrooms,red pepper and garlic. Cook until vegetables are tender about 10-15 minutes.

Step 3

Stir in rest of ingredients and bring to a boil. Add chicken back in skillet and lower heat to low. Cover with lid and simmer for 20 minutes and stir occasionally. Take lid off and simmer another 20-25 minutes stirring occasionally.

Step 4

Serve over a bed of pasta of your choice and enjoy the delicious goodness.

I have to agree this is not only delicious but one I look forward to serving to my family and friends. It has been added to my cookbook along side our family favourite. The carrots are an added touch. A keeper.

I was looking for a different way to serve chicken breasts, came upon this recipe and decided it would probably be great with breasts instead of thighs. Turned out lovely and very flavourful !! I had a serano pepper i needed to use up so added it , gave it a nice little zing. Thanks for posting, it 's a keeper and next time i will use the thighs and i will serve it over noodles, although we did like it over baked potato..
