"I had something like this at I Hop it was amazing no meat just alot of veggies swiss cheese and hollandaise sauce, wowser its on of my most pinned dishes on another site, it could be impats picture lol....."

Step by Step Method

Step 1

Saute onion and mushrooms, remove.

Step 2

Beat eggs, add salt and pepper.

Step 3

Put in hot pan you may need to add more butter, cook moving the egg so it cooks. Add mushroom and onions, add swiss cheese and spinach.

Step 4

Cook til egg is set and cheese melting. Flip in thirds.

Step 5

Plate. Top with hollandaise sauce and tomatoes.

Thank you dienia b for one of the best omelettes I have had, would happily pay for it in a restaurant or café. The only change I made was to use a slice of aged cheddar instead of swiss and to fold in half instead of thirds, mainly because I was a little more generous with the fillings than the recipe called fall. Thank you once again, made for Billboard Recipe tag game.
