"I really do enjoy this salad, which incorporates my two favorite things ~ Mushroom's and Cheese. I buy the mushrooms pre-sliced to save time in slicing them. This make for a wonderful fresh side salad that compliment's just about any main. This salad is best served straight away, as I find the cheese soaks up the moisture and goes gluggy."

Step by Step Method
Step 1
Wipe the mushrooms clean with a damp cloth as slice them thinly, then place in a salad bowl.
Step 2
Next prepare the dressing; put the oil in a small bowl with the strained juice of the lemon and a pinch of salt and pepper, and beat well to mix.
Step 3
Finely chop or coarsely grate the Parmesan cheese and add it to the mushrooms ~ pour over the dressing and mix gently, sprinkle with the chopped parsley.
Step 4
Serve immediately.
