Step by Step Method
Step 1
In large saucepan
Step 2
Melt butter.
Step 3
Add mushrooms, celery, onions and saute 15 minutes.

Add flour, evenly coating mushrooms mixture.
Step 5
Stir for 10 minutes.
Step 6
Add chicken stock, stirring with a wire whip.
Step 7
Reduce heat and bring back to simmer stirring briskly with whip.
Step 8
Simmer 1/2 hour to let mushroom flavor come through.
Step 9
Add cheese and cream.
Step 10
Season to taste with salt, white pepper and Tabasco
