Step 1: In large saucepan
Step 2: Melt butter.
Step 3: Add mushrooms, celery, onions and saute 15 minutes.
Step 4: Add flour, evenly coating mushrooms mixture.
Step 5: Stir for 10 minutes.
Step 6: Add chicken stock, stirring with a wire whip.
Step 7: Reduce heat and bring back to simmer stirring briskly with whip.
Step 8: Simmer 1/2 hour to let mushroom flavor come through.
Step 9: Add cheese and cream.
Step 10: Season to taste with salt, white pepper and Tabasco
