Ingredients

The ingredients are:
  • 8 ounces fresh sliced mushrooms
  • 1 cup yellow onion,diced
  • 3/4 cup celery,diced
  • 6 cups chicken stock
  • 16 ounces heavy cream,(1 1/2 cups)
  • 12 ounces sharp cheddar cheese, shredded
  • 3/4 cup flour
  • 1/2 cups butter
  • 1/2 teaspoon white pepper
  • 1/32 teaspoon tabasco sauce

How to Make

  • Step 1: In large saucepan

  • Step 2: Melt butter.

  • Step 3: Add mushrooms, celery, onions and saute 15 minutes.

  • Step 4: Add flour, evenly coating mushrooms mixture.

  • Step 5: Stir for 10 minutes.

  • Step 6: Add chicken stock, stirring with a wire whip.

  • Step 7: Reduce heat and bring back to simmer stirring briskly with whip.

  • Step 8: Simmer 1/2 hour to let mushroom flavor come through.

  • Step 9: Add cheese and cream.

  • Step 10: Season to taste with salt, white pepper and Tabasco
