Step by Step Method

Step 1

Preheat broiler.

Step 2

In a bowl whisk together the eggs, 2 T parmesan, and next 5 ingredients (-salt).

Step 3

Place a small skillet over medium-high heat and heat the oil. Add mushrooms and capers and saute for 5-10 minutes or until mushrooms are brown. Pour in egg mixture. Reduce heat to low. Cook without stirring for 3-5 minutes or until eggs are set. Sprinkle with 2 T cheese and place under the broiler until top is brown and set (1 minute).

Step 4

Let cool for 5 minutes and then run spatula around edges to loosen and place on plate and cut in half to serve 2.

This was really good, but like WAIGEN, I accidentally put all of the cheese in the egg mixture. I used salted capers that I soaked first to get some of the salt out, and used no additional salt in it. For me, it was a bit too salty for my taste, but not the recipe's fault. The fresh herbs are what take this frittata over the top. So, so good! I used an 8 inch cast iron pan and the frittata was a bit thin - next time will use a 6 inch pan.

This is great tasting. I like the fresh herbs. I accidentally put all the parmesan in at the beginning. A perfect amount for two servings.

This was fabulous! I cut it in half for just me but used the original amount of mushrooms. Loved it!!
