Ingredients

The ingredients are:
  • 4 eggs
  • 4 tablespoons Parmesan cheese, grated, divided
  • 2 tablespoons basil, chopped
  • 1 tablespoons oregano, chopped
  • 1 teaspoon dijon mustard
  • 1/4 teaspoon pepper
  • 1/8 teaspoon salt
  • 2 tablespoons olive oil
  • 3 baby portobello mushrooms, stemmed and caps thinly sliced
  • 4 teaspoons capers, drained

How to Make

  • Step 1: Preheat broiler.

  • Step 2: In a bowl whisk together the eggs, 2 T parmesan, and next 5 ingredients (-salt).

  • Step 3: Place a small skillet over medium-high heat and heat the oil. Add mushrooms and capers and saute for 5-10 minutes or until mushrooms are brown. Pour in egg mixture. Reduce heat to low. Cook without stirring for 3-5 minutes or until eggs are set. Sprinkle with 2 T cheese and place under the broiler until top is brown and set (1 minute).

  • Step 4: Let cool for 5 minutes and then run spatula around edges to loosen and place on plate and cut in half to serve 2.
