Step 1

Pound chicken breast halves until evenly thin.

Step 2

In a shallow bowl combine flour with garlic powder, salt and pepper.

Step 3

Dredge chicken with flour.

Step 4

In a large skillet, heat 2 tablespoons of butter over medium heat. Cook chicken in butter for about 4 to 6 minutes on each side, until tender and cooked through. Remove chicken to a an 11x7-inch baking pan, or a shallow heat-proof pan; tent with foil to keep warm.

Step 5

Add remaining 2 tablespoons of butter to skillet and saute mushrooms and garlic until tender.

Step 6

Arrange mushroom slices on top of each piece of chicken; cover with a slice of cheese. Place remaining mushrooms around chicken.

Step 7

Place chicken breasts under a hot broiler until cheese is melted. Serve immediately.

DELICIOUS! I used a full pound of baby bella mushrooms, added some sweet onions. Since I didn't have anything to pound the chicken, I used a rolling pin, which didn't really work. Chicken was tender and juicy. I also used part skim mozzarella cheese. DH had two helpings and actually uttered that is was good, which translated means 5-Stars. Made for Billboard tag.
