Ingredients

The ingredients are:
  • 4 (1 to 1 1/4 pounds) boneless chicken breasts
  • 1/4 cup all-purpose flour (for dredging)
  • 1 1/2 teaspoons garlic powder
  • 1/2 teaspoon salt (more to season mushrooms)
  • 1/2 teaspoon pepper (more to season mushrooms)
  • 4 tablespoons butter, divided
  • 1 can (4 ounce) sliced mushrooms
  • 1 garlic clove, minced
  • 4 ounces mozzarella cheese (4 slices)

How to Make

  • Step 1: Pound chicken breast halves until evenly thin.

  • Step 2: In a shallow bowl combine flour with garlic powder, salt and pepper.

  • Step 3: Dredge chicken with flour.

  • Step 4: In a large skillet, heat 2 tablespoons of butter over medium heat. Cook chicken in butter for about 4 to 6 minutes on each side, until tender and cooked through. Remove chicken to a an 11x7-inch baking pan, or a shallow heat-proof pan; tent with foil to keep warm.

  • Step 5: Add remaining 2 tablespoons of butter to skillet and saute mushrooms and garlic until tender.

  • Step 6: Arrange mushroom slices on top of each piece of chicken; cover with a slice of cheese. Place remaining mushrooms around chicken.

  • Step 7: Place chicken breasts under a hot broiler until cheese is melted. Serve immediately.
