Step by Step Method
Step 1
Using hands squeeze excess liquid from zucchini and combine the zucchini, cheese, sesame seeds, chickpeas, seasoning, breadcrumbs, flour and egg in a bowl.
Step 2
Using damp hands shape into 4 patties
Step 3
Heat oil in a frying pan over moderate heat and cook patties for 4 minutes each side or until golden brown.
Step 4
Whisk yoghurt and mint in a small bowl.
Step 5
Place bread roll bases on serving plates and top with salad leaves, a patty and yoghurt mixture and serve topped with remaining bread.
