Ingredients

The ingredients are:
  • 1 zucchini, whole (coarsely grated)
  • 1/4 cup grated low-fat cheddar cheese
  • 1 can (400 grams) garbanzo beans (rinsed and lightly mashed, chickpeas)
  • 1 tablespoon Moroccan seasoning
  • 1/2 cup breadcrumbs (dried, packaged)
  • 1/4 cup all-purpose flour (plain)
  • 1 large egg, lightly whisked
  • 2 tablespoons oil (vegetable or olive oil)
  • 1/2 cup low-fat yogurt (natural)
  • 1 tablespoon mint leaves, finely chopped
  • 4 (6 ounces) bread buns (split)
  • 50 grams mixed salad leaves

How to Make

  • Step 1: Using hands squeeze excess liquid from zucchini and combine the zucchini, cheese, sesame seeds, chickpeas, seasoning, breadcrumbs, flour and egg in a bowl.

  • Step 2: Using damp hands shape into 4 patties

  • Step 3: Heat oil in a frying pan over moderate heat and cook patties for 4 minutes each side or until golden brown.

  • Step 4: Whisk yoghurt and mint in a small bowl.

  • Step 5: Place bread roll bases on serving plates and top with salad leaves, a patty and yoghurt mixture and serve topped with remaining bread.
