"My identical twin and I each have 2 kids about the same age, and they had so much fun together growing up. It's funny because my daughter looks like her son, and my son looks like her daughter. When they were very small, both sets called both of us mommy. Anyway, this was their favorite dish back then, and they still love it today. I always take a double-batch to birthdays and holidays, just so my nephew, Shawn, can take home the leftovers. Good stuff."

Step by Step Method

Step 1

Preheat oven to 350 degrees. Grease a 2 quart covered baking dish.

Step 2

Cook macaroni in salted water per package directions, drain. Meanwhile, cut cheese into small 1/2" cubes

Step 3

Melt butter in heavy saucepan over medium heat. Whisk in flour and cook until the roux (butter and flour) turns a light, golden color, 5-7 minutes.

Step 4

Add milk, a little at a time, increasing the heat to medium-high and whisking continually until sauce thickens to desired consistency.

Step 5

Remove from heat and season with salt, pepper and nutmeg. Taste and adjust seasoning.

Step 6

Stir cheese to cooled macaroni, then transfer to baking dish and pour white sauce over pasta. Bake, covered, for 40-50 minutes or until done.

Very easy recipe with ingredients that are in my pantry all the time. I love the touch of nutmeg. The recipe comes out creamy and I used 2% milk. I'll make this again
